When I made my first batch of chocolate chip cookies so many years ago, right away I knew they were different and Mitch’s Cookies was born. The ingredients were the same but the cookie was completely different. People were amazed at how good they tasted!  I discovered it was not what was in my cookie that made it so unique but how I mixed the ingredients together. One fan that lives in Maine waits by the mailbox in December for her Mitch’s cookies to arrive.  She immediately takes one out and puts the rest in the freezer.   She takes one at a time out of the freezer and heats it for one minute in the microwave.  It tastes like it just came out of the oven.   When the bag is empty she takes the crumbs and puts them on top of vanilla ice cream.  Good to the last crumb!

 

Mitch’s Cookies’ fans wait for their batch to arrive for Christmas and mid summer give away. Some people like dipping them in milk while others like to heat them up and put a nice scoop of vanilla ice cream on top. I think once you taste a Mitch’s cookie you will be hooked.  The outside is brown and crispy.  The inside is a cross between a cookie and a cake.  It is loaded with soft, gooey chocolate chips that melt in your mouth.  The inside of the cookie is moist and fluffy.   You will not stop at one bite.  You will be compelled to savor every last morsel of that cookie.  Once you have had a Mitch’s Cookie you will never have another like it.
